Barrel-Aged Islay Whisky Coffee
We use an Islay cask to prepare our green coffee beans prior to roasting. We lightly roast the coffee to preserve as much of the scent and flavour of the whisky as we can while maintaining the quality of our roast. Our coffee of choice for this process is Brazilian Bom Jesus.

The Story Behind the Coffee
Fazenda Bom Jesus coffee farm is the work of couple Gabriel and Flavia Lancha Oliveira. The farm is located in Cristais Paulistas in the Alta Mogiana Region near Sao Paulo. Both Gabriel and Flavia are grandchildren of coffee producers, and their sons Lucas and Gabriel Junior also farm full-time.
The farm’s aim is to sustainably impact the social and economic development of their region. They were the founder of the regions Alta Mogiana Speciality Coffee Association. It promotes a greater understanding regarding speciality coffee in the region as well as developing better farm practices. Performance bonus payments are also made alongside employees fixed wages. All employees on the farm must be literate and receive training to do their job and all their children must be enrolled at the local school.
